by Annie J. Pascua, Nutritionist

Picture
Chicken is full of the essential amino acids needed to make body building protein.

Ingredients
•    8 pieces skinless chicken breast, cut into 4 pieces each
•    3 gloves garlic, finely chopped
•    2 thinly sliced onions
•    1 small red and green pepper cut in strips (blanch lightly)
•    1 tablespoon fish sauce, 1/4 t pepper and 1 tablespoon curry powder and turmeric powder
•    1 cup coconut milk
•    2 lemongrass stalks, cut into 2 cm pieces

Procedure
Heat 2 tablespoons oil in a deep fryer. Add garlic, onion, lemon grass, chicken pieces, fish sauce, pepper, curry and turmeric powder, and stir fry for 5 minutes. Add coconut milk, mix it well and simmer for 10 minutes until chicken is cooked through. Add strips of red and green pepper for garnishing.
